East Coast Cobb Salad

Product Great meal on a hot summer night!  Add a glass of white wine and some crusty bread, dinner is served.

Ingredients:

  • Eight cups of Mesculun Greens, washed.
  • 11/2 Cup of fresh corn, cooked and off the cob.
  • 1 Cup red onion, diced.
  • 6 Stalks of crisp celery, diced.
  • 14 Grape tomatoes, cut in half.
  • 1 Cup of kalamata olives, cut in half
  • 3 Large eggs, hard boiled and chopped.
  • 1 Cup of Gorgonzola cheese, crumbled.
  • 1 Large avocado, peeled and chopped.
  • 10 Slices if thick bacon cooked crisp, crumbled.
  • 1Lb. Fresh cooked lobstermeat, diced.
  • 2 x 6oz. containers of smoked shrimp, if not available small pink shrimp cooked and out of their shell.

Directions:

In a large platter place the washed greens, drizzle extra virgin olive oil, red wine vinegar, kosher salt and fresh ground black pepper over the greens.  Be careful not to over dress the salad, toss the greens lightly.
Now over the top of the greens, start forming rows with the rest of the ingredients, keeping colors seperated to form stripes over the top of the salad.
You can place a simple vinegarette dressing on the table with the salad it may or may not be needed depending on how dressed you like your salad.
This salad can also be made with fresh picked Maine Crabmeat instead of one of the other seafoods. If you do not like Gorgonzola cheese, Blue cheese can be used.
