Whole Maine Shrimp

Culinary: Steamed spiced, steamed plain, sautéed or sushi

Characteristic: Fresh shrimp found in Maine are a cold water shrimp, "Pandalus Borealis" and make up close to 80% of the entire cold water shrimp market.  The shrimp are harvested with trawl from depths of 100 to 200 feet and up to 3000 feet.  When caught and brought onto the boat they are immediately iced and then delivered to shore.  A four or five inch pink shrimp is considered big by standards.  The color of pink shrimp comes from the nutrient-rich cold water of the Northern Hemisphere. In the past, shrimp was thought to be high in cholesterol.  Recent research has proved that, in fact, shrimp has only a moderate amount of cholesterol or about 1/3 of what is found in one egg.  The season generally runs from December until early spring but is subject to change every year.
